Good and Easy Lemon Blueberry Loaf

Lemon and blueberry is one of those flavor combinations that just never misses. Bright, sweet, a little tangy — it works in muffins, it works in scones, and it really works in this loaf. I made it last week almost on a whim, without overthinking the ingredients or the method, and it turned out to be one of those recipes that’s dangerously easy to make again and again.

This bread is soft, fluffy, and packed with blueberries in every single bite. My three-year-old took one look at a slice, took a bite, and declared it a “squishy cake.” Which, honestly? Is the most accurate description I could have come up with myself. It has that soft, tender, almost cake-like texture, but it’s humble enough to call itself a bread.. so you can eat two slices for breakfast and not feel weird about it.

The best part is how low-effort this loaf is. There’s no mixer required, no fussy technique, no waiting around for butter to come to room temperature if you don’t want to. You whisk, you stir, you fold in blueberries, and you bake. If you’re gluten-free, this recipe swaps easily for it. I use this gluten-free flour and it turns out just as soft and flavorful as the original.

Why This Recipe Works

The magic here is the yogurt. A full cup of plain Greek yogurt (sour cream works too) keeps this loaf incredibly moist and gives it a slight tang that balances out the sweetness and plays so well with the lemon. It also means you don’t need a ton of butter or oil to get a soft crumb because the yogurt is doing most of the heavy lifting.

Fresh lemon zest is the other key player. It doesn’t overpower the loaf with sourness the way lemon juice can; instead, it perfumes the whole thing with that bright, sunny lemon flavor without messing with the batter’s consistency.

And because everything comes together in two bowls with a whisk and a spatula, this is the kind of recipe you can throw together on a weeknight without any real planning. No creaming butter and sugar for five minutes, no chilling the dough, no special equipment. Just good, honest ingredients that come together into something that tastes like you tried a lot harder than you actually did. That’s why I named this one good and easy lemon blueberry load.

The Recipe

For the Bread:

  • 1-1/2 cups + 1 Tablespoon all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plain Greek yogurt, or sour cream
  • 1 cup granulated sugar
  • 1/2 cup oil or softened butter
  • 3 large eggs
  • 1 teaspoon lemon zest, from 1 lemon
  • 1/2 teaspoon vanilla extract
  • 1 heaping cup blueberries, fresh or frozen
  • Optional: 2-3 tablespoons granulated sugar for topping

Instructions:

  1. Preheat the oven to 350°F. Grease well the bottom and sides of a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the sugar and oil (or softened butter) until well combined. Add the yogurt, eggs, lemon zest, and vanilla.
  4. Slowly fold the dry ingredients into the wet, just until incorporated. In a separate bowl, toss the blueberries with a little flour, then gently fold them into the batter.
  5. Pour the batter into the prepared pan (Optional here, but if you want a slightly crystalized top, add a few tablespoons of granulated sugar on top of the batter before baking). Bake for 55 minutes – 1 hour or until a toothpick comes out clean.

If you’re making this gluten-free, swap in your favorite 1:1 gluten-free flour blend I’ve had great luck with this one and you honestly can’t tell the difference in texture.

Frozen blueberries work just as well as fresh here, so don’t hold off on making this just because it’s not blueberry season. No need to thaw them first, just toss them in flour straight from the freezer and fold them in the same way.

This loaf keeps well at room temperature, covered, for a couple of days, and even longer in the fridge. It also freezes beautifully, just slice it first, then wrap individual slices so you can pull one out whenever a craving hits.

And if you want to take it a step further, a simple lemon glaze on top (powdered sugar whisked with a little lemon juice) never hurts. It’s not necessary becausethe loaf is plenty flavorful on its own, but it does make it feel a little more special if you’re serving it to guests.

However you make it, I have a feeling this one is going to become a regular in your kitchen too. It’s the kind of recipe that earns a permanent spot in the rotation: easy enough for a Tuesday, good enough for company.
