The 25-Minute Raspberry Oat Bars I’ve Been Making Since 2010

I’ve had this one since 2010, and every time I bring it back into rotation, it’s the same story: they disappear immediately, people ask for the recipe, and I remind myself that the best desserts don’t have to be complicated.

This is one of the easiest desserts you will ever make. No mixer, no multiple bowls, no complicated steps. It’s a true mix, layer, bake situation. From start to finish, you’re looking at about 25 minutes total, including bake time. It’s the kind of recipe you can throw together last minute, whether it’s for a bake sale, a playdate, or just a weeknight when you want something sweet without the effort.

I recently made these for my son’s school bake sale, and they sold out almost immediately. Which, if you’ve ever brought something to a school event, you know is the ultimate test. Kids love them, parents love them, and they somehow feel nostalgic and indulgent at the same time.

The magic of this recipe is in the layers.

The base is made from yellow cake mix, oats, and butter. It bakes into this soft, slightly chewy, buttery layer that almost melts in your mouth. It’s not quite a cake, not quite a crumble, but somewhere perfectly in between. The oats add just enough texture to keep it interesting, while the cake mix keeps everything soft and rich.

Then comes the raspberry layer.

You mix raspberry jam with a little bit of water to loosen it up, making it easy to spread evenly over the base. Once baked, that layer becomes thick, jammy, and deeply flavorful. It’s sweet, slightly tart, and just rich enough to feel like a real treat.

And finally, the crumble on top.

That reserved bit of the oat mixture gets sprinkled over the jam layer, creating a golden, slightly crisp topping that ties everything together. It gives you that classic crumble bar feel without any extra work.

The end result is something that tastes like you spent way more time on it than you actually did.

These bars are definitely on the indulgent side. This is not a “healthy swap” kind of recipe, and honestly, that’s part of the charm. It’s buttery, sweet, rich, and meant to be enjoyed exactly as it is. Sometimes you just want something simple and delicious, and this delivers every time.

What I love most is how versatile it is.

You can serve these warm right out of the pan, when they’re extra soft and gooey. Or let them cool completely and slice them into neat bars for sharing. They hold together beautifully once cooled, which makes them perfect for things like bake sales, gifting, or packing up for a gathering.

They’re also incredibly forgiving. You can use rolled oats or quick oats, whatever you have on hand. You can swap the raspberry jam for another flavor if you want to change it up. Strawberry, blackberry, even apricot would all work here. But there’s something about raspberry that really stands out. It cuts through the richness of the base and gives the whole dessert a balanced, slightly tangy finish.

If you’re someone who loves having a few “go-to” recipes in your back pocket, this is one to save.

It’s the kind of thing you can make without thinking too hard. The ingredients are simple, the steps are straightforward, and the payoff is always worth it. Whether you’re baking with kids, need something quick for an event, or just want a low-effort dessert that feels nostalgic and comforting, these raspberry oat bars check every box.

And if you’re anything like me, you’ll make them, love them, forget about them for a while… and then come back years later wondering why you ever stopped.
